Recipe:Chicken Soup for the Soul
This soup is wonderful if you are feeling a little under the weather. I wrote about why I was making it in a post tessross.wordpress.com/2014/03/02/just-a-lovely-lazy-sunday/
All you do is throw in a pot :
5/6 cups of chicken stock (I use left-over vegetable water I keep in the freezer and add a good chicken stock powder to it; you can use water and stock powder)
one chopped onion
three chopped celery stalks
two carrots sliced
seasoning (I added 1 teas Persian spice powder but you can use coriander, cumin, turmeric or any of these Indian spices which add to the flavour … and they are good for you!)
Boil it up for 40 minutes until the chicken is tender and then cut up the chicken into small pieces.
If you want it thicker, you can add two tablespoons of rice in the last 15 minutes
or add rice noodles almost at the end depending on the size of the noodles.
**** I do not blend this soup as I do many of my soups because there is something comforting about sipping on the chicken broth and the thinly sliced and well cooked vegetables and pieces of chicken.
